Production Technique

Saignee was pulled after 3 days of fermentation and then fermented at cooler temperatures to preserve aromatics. Fermentation was stopped mid-way through. No sugar added.

Tasting Notes & Pairings

Tasting Notes: Juicy with dark fruit flavors reminiscent of berry pie with a touch of spice.

Pairings:  Ideal with BBQ and all things take-out.

Simple Summer Sangria

Ingredients
1 green apple, cored and chopped, 1 orange, sliced, then cut in quarters, 1 lime, sliced, 1 lemon, sliced, 1/2 cup raspberries or blackberries, 1 (750 mL) bottle of Pacific Rim Red Blend wine,  1/4 cup orange juice, Mint for garnish (optional).

Instructions
1. Place all fruit in a large pitcher. Add wine, and orange
juice and stir.
2. Chill in the fridge for 2 hours.
3. Serve in glasses with ice and some of the fruit.

Red Pomegranate Sangria

Ingredients

1 cup pomegranate seeds, 1 orange, thinly sliced, 1 (750 mL) bottle of Pacific Rim Red Blend wine, 1/4 cup pomegranate juice, 1/4 cup orange juice, Cinnamon stick & star anise for garnish (optional).

Instructions
1. Place all fruit and cinnamon stick in a large pitcher. Add
wine, brandy, pomegranate juice, and orange juice and stir.
2. Chill in the fridge for 2 hours.
3. Serve in glasses with ice and some of the fruit.
