Grapes are picked early (22.5-23.5 Brix), fermented at cold temperatures for 30 days, and then aged in stainless steel tanks. We leave our dry wines sur lie post fermentation for up to five months and we stir the lees once or twice a week

Pairing: Endlessly versatile! Ideal with Asian and European cuisine and a wide variety of seafood, cheeses, and cold meats. Also perfect with a pepperoni pizza.
Autumn Apple Cider Sangria
Ingredients
2 red apples, cored and chopped, 2 pears, cored and chopped, 1 (750 mL) bottle of Pacific Rim Dry Riesling wine, 2 1/2 cups fresh apple cider, 1 cup club soda, 1/2 cup ginger brandy, Cinnamon stick for garnish (optional).
Instructions
1. Place all fruit in a large pitcher. Add wine, apple
cider, brandy and club soda and stir.
2. Chill in the fridge for 2 hours.
3. Serve in glasses with ice and some of the fruit.
